IOM Report Recommends Improved School Meal Nutrition Standards
The Institute of Medicine (IOM) recently released “School Meals: Building Blocks for Healthy Children,” a report to the USDA recommending that menu planning standards for school breakfast and lunch include: increasing the amount and variety of fruits, vegetables, and whole grains, setting a minimum and maximum level of calories, and focusing more on reducing saturated fat and sodium among others. Also mentioned is the need for school kitchen equipment and training to help provide the increases in fresh fruits and vegetables that IOM supports.
